Brenda's Italian-Style Chicken Soup & Herb-Crusted Tomato Sandwich
***I love to cook with garlic, onion, and olive oil and prefer a little more (adjust those ingredients to your liking)
Herb-Crusted Tomato Sandwich:
2 Vine-Ripened Tomatoes
2 Large Roasted Red Peppers
2 Tbsp. Fresh Basil & Oregano
2 Tbsp. Chopped Onion
1 Tsp. Minced Garlic
1 Tbsp. Olive Oil
1/2 Tbsp. Balsamic Vinegar
Crusty Italian Bread or any bread of your choice
Directions:
Sauté onion and garlic in olive oil for two minutes on medium heat and set aside.
Brush tomato slices (I like 2 thick slices of tomato!) with a little olive oil and coat with basil & oregano.
Sear coated tomato slices on both sides.
Slice two pieces of crusty Italian bread or bread of your choice.
Top bottom piece of bread with green leafy lettuce.
Place a roasted red pepper on top of the lettuce and then your seared herb-crusted tomato.
Place a pinch of sea salt.
Drizzle with balsamic vinegar and place your second piece of bread on top.
Cut in half and you have a delicious savory sandwich to serve with your Italian Chicken Soup (recipe below).
Italian-Style Chicken Soup:
There are lots of ways to make chicken soup and this is my favorite way. I don't add carrots because I like raw carrots not cooked carrots, so it all depends on individual taste. You can also add potatoes and roasted tomatoes to this recipe which I do sometimes. This recipe is very easy to make and very tasty. I make my chicken broth in advance and cook the noodles or pasta while I re-heat the broth.
Ingredients:
1 Cup Chopped Onion
1 Cup Celery
2 Minced Garlic Cloves
2 Boxes of Certified Organic Chicken Broth (I like low-sodium Pacific or Swanson brands. Make sure you pick up a certified organic brand.
1 Whole Roasted Chicken (store bought or you can make your own)
1 Box of Pasta (Penne, Spaghetti, or whatever you enjoy)
Directions:
Sauté onion in olive oil over medium heat until translucent. Then add garlic and celery and sauté lightly.
Add chicken broth and simmer for around 10-15 minutes.
Add roasted chicken pieces and simmer for another 10 minutes.
Prepare noodles or pasta (I like Penne).
Dish broth and chicken over noodles or pasta and sprinkle with parmesan cheese.
Serve with Herb-Crusted Tomato Sandwich (Recipe above) and you have a delicious lunch or dinner!
